2 Oeufs entiers
0.250 kg Mascarpone
0.100 sucre semoule
extrait de vanille ou café
Clarifier ( séparer) le blanc et le jaune des œufs.
Blanchir les jaunes avec le sucre, puis ajouter le mascarpone.
Battre les blancs en neige, et les incorporer délicatement au mélange précèdent.
Ecrasez des biscuits spéculos et disposer au fond des verrines.
Pocher la crème à l’aide le la Multidouille Jade. Saupoudrez de cacao.
Servir avec un café bien serré.
